Breakfast veg

As promised in the week 3 thread last night, I tried a frittata/omelette style concoction this morning. Grated courgette and carrot still very moist after a night in tupperware in the fridge, will probably go longer on the tomatoes tomorrow though, the natural saltiness they bring to the party is crucial. Otherwise, great success! Maybe some parsley tomorrow too.
Pleasing.

  2. Nope, was yesterday so still on week 3 diet so 1 egg plus a white. Did the same this morning with the solitary egg though and result much the same. I recommend grating in advance, seems to keep good in the fridge for ages.
